The newest addition to Walsh Bay, Pier Seven's Firefly is positioning itself as an upmarket espresso joint by day and a place to enjoy wine and cocktails at night. Bar manager Dave Earl is obsessed with 42 Below feijea, an infusion of New Zealand's 42 Below vodka and feijeas, a fruit native to South America that's popular in NZ and to a lesser extent, here. "Its unique combination of a very sweet, aromatic nose and a tart, pungent finish make it a real challenge to mix into a drink" says Earl. Here it's deployed in a riff on the classic Moscow mule (hence the name).
2 sprigs mint
1/4 lime, diced
Ice
45mL 42 Below feijoa
Ginger beer
Muddle the mint and lime in a pewter lancard, Add ice cubes and pour in 42 Below feijoa and ginger beer to fill. Stir well and garnish with more mint.
